One pan Chicken and Vegetable Rice

Oven baked chicken with vegetable rice

Ingredients

6 chicken drumstick(~2 lbs)

1 brown onion

1 tbsp tomato paste

1 cup green peas

2 carrot

2 cup long grain white rice

2 tbsp olive oil

2 tsp salt (10 gr)

1/2 tsp pepper



Instructions

  1. Rinse the rice and soak for 10 minutes

  2. In the meantime, finely chop the onion and dice the carrot

  3. Add the olive oil to the pan and heat it up

  4. Sauté the onion in for around 2-3 minutes until they become soft

  5. Add 1 tbsp tomato paste, cook 2 minutes

  6. Add carrots, green peas then price cook 4-5 minutes

  7. Transfer the rice to the pan, add chicken to the top and add boiled water

  8. Mix 1 tbsp tomato paste with 1 tbsp olive oil and pinch of salt. Coat the top of chichen

  9. Cover with wet and crumpled parchment paper

  10. Bring the oven 60 minutes, cook last 10 minutes without paper
